How to delete cookies on Internet Explorer 8
1. Click on Safety> Delete Browsing History
2. Check mark Cookies and check mark Preserve Favorites website data, then click Delete

This will bring up the same option.
Currently there is no way to delete a single cookie on a single website with IE8.
